Yeast and sugar was mixed into the wine to initiate the second fermentation and then bottled and sealed with a crown seal. 👑
The bottles have now been laid in crates to ferment, they will then spend time on the lees (dead yeast cells) which add depth of flavour.
The next process (riddling) will take place later next year…stay tuned!
